Chorizo Shakshuka Recipe

  1. In large pan, heat olive oil on medium heat. Cook onion till translucent.
  2. Add garlic and spices. Cook for 1 minute.
  3. Break up the chorizo and cook until brown.
  4. Pour in tomato paste, mix well. Season with salt and pepper to taste.
  5. If the mixture is too stiff, use stock to loosen it.
  6. Turn down the heat to low and make wells in the meat equal to the number of eggs. Crack one egg into each well and season them.
  7. Cover the pan and cook until the eggs are firm.
  8. Add any garnishes you like and serve.
