Ingredients
- 12oz Tomato Paste
- 1lbs Chorizo
- 2tbsp Olive Oil
- 1 Medium Onion
- 4 Garlic Cloves
- 2tsp Paprika
- ½tsp Cumin
- 1tsp Curry Powder
- 1 Egg Per Person
- Salt and Pepper To Taste
Instructions
- In large pan, heat olive oil on medium heat. Cook onion till translucent.
- Add garlic and spices. Cook for 1 minute.
- Break up the chorizo and cook until brown.
- Pour in tomato paste, mix well. Season with salt and pepper to taste.
- If the mixture is too stiff, use stock to loosen it.
- Turn down the heat to low and make wells in the meat equal to the number of eggs. Crack one egg into each well and season them.
- Cover the pan and cook until the eggs are firm.
- Add any garnishes you like and serve.
